Hey, hey … it’s been a couple weeks since my last post about tie dye, which I’ll get into. But with the start of October and my dad’s recent birthday, in heaven, I’d love to share his amazing taco soup recipe. It’s fall and its prime time to start making some chili or soup! So, enjoy my updates and my dad’s amazing taco soup recipe! Mmmm … you’ll be glad you did!
Where’s Meriah?
So, where has Meriah been the past couple weeks? I’m sure you’re dying to know! I’ve not been feeling well at all. I mean, at all! It all started October 1st, in the middle of the night. At some point, I felt a sharp pain and then kept waking up throughout the night itchy. Didn’t think much of it and we had some friends over for the weekend from North Carolina.
We woke up Saturday and had a fun, homemade breakfast with our friends and had planned on going to the local corn maze at Cagle’s Farm. I kept itching off and on .. and I mean everywhere. Belly, back, legs … but still not too noticeable.

We go to Cagle’s Farm … have a blast … fail at the corn maze and then head to my sister’s house for dinner. Dinner is great and the kids have fun. It’s late, so we head home. As I’m home and we are talking with our friends, Granny and Dave, I itch more and more and more. Go to bed and wake up with HIVES everywhere. HUGE, ugly hives in between my legs and other warm spots. Smaller hives on my arms and legs and hands and feet. SO UNCOMFORTABLE. Benadryl helps a bit, but as soon as four hours hit, I need another dose to keep from hive city.
HIVES, HIVES and more HIVES
I know it’s most likely not an allergic reaction, but you never know. I go to urgent care and get some steroids. Over the next couple days, there is no relieve to the hives. I’m running a low-grade fever and my heart rate keeps going up to the 140s … even 165’s +. ER visit determines a bit of pneumonia and some sort of infection my body is fighting, but they say just go to a dermatologist (hilarious … not the place to go!). I go to a primary doctor and get prescribed a stronger antibiotic to help rid of whatever infection I have.
Among other symptoms and things, after about 11 days the hives die down. I’m still a bit itchy even today, but it’s a TON better. There are a couple theories, but at least I’m feeling good today … whew, it’s been a long few weeks! Glad to be back at my computer and sharing my mommyprojectguru life!
Taco Soup Recipe!
Anyway, I made this Taco Soup before I got sick, but wasn’t feeling well enough to post … so I finally get to share it today! My dad’s birthday was October 4th and I think of him every day, but even more so on his birthday. He always told me he made up this taco soup recipe when he was a kid and he made it for us often while growing up. I dedicate this post to him, the best dad ever!
To get started, grab your ingredients!
Ingredients
1lb Ground Beef
2 cans Tomato Sauce
2 cans Ranch Style Beans
1 packet Taco or Fajita Seasoning
Sour Cream
Shredded Cheese
Tortilla Chips
Ground that beef!
First, brown your ground beef. Then drain any grease and season. I prefer fajita seasoning, but use your favorite … whether it be taco or your own mix. In a large pot, put the season ground beef in along with two cans of tomato soup and two cans of Ranch Style beans. You can add a bit of water. I usually add about ½ a can. It just depends on preference. No water is fine, too. The less water, the thicker the soup! Heat this up to boiling and it’s done!
RANCH STYLE BEANS = CRITICAL
Before I go too far, I can’t stress how important the Ranch Style Beans are to this equation. It MAKES the soup. There is a jalapeno version that you can use if you want ot spice it up a bit … but regardless, make sure you use ranch style beans. Otherwise, it’s not my dad’s amazing taco soup … it’s just taco chili, or something! HAHA!
Mmmmmmmm!
Now that the taco soup is HOT, put some into a bowl and top with cheese, sour cream and chips …. Take a bite and try not to go mmmmm. Your belly will be delighted!
Enjoy this taco soup many times over this fall and winter season … and if you know my dad, think of him as you taste it! As you can see, my son Miles sure loves him some Taco Soup! My dad, aka grandpa, would be proud!
